I remember what I ordered the first time I ever went to a Thai restaurant and that is still one of my top appetizers and entrees to this day. I had Basil Rolls and Pad Thai! I had never before tasted the wonderful combination of flavors that bursted out of the Basil rolls with peanut sauce....next time I went I ordered basil rolls and a cup of coconut soup...that was enough for my dinner....The Massaman is another favorite of mine and I always have a hard time choosing t new dish when I go out and eat Thai food.
The best thing is if we are a couple of people and we all order different entrees and appetizers and we can share... I like the stuffed dumplings and chicken with peanut sauce.

Thai cooking is great, low calorie because it's low fat and yet high flavor. A few ingredients are a little difficult to find in some instances but there can be substitutions. For example, if you really can't find Ramen noodles for chow mein or thread noodles, you can always find Q & Q fideos in the Mexican section -- just remember that they are made with soft wheat and you have to lightly toast or fry them in a pan so they don't stick together, turn into paste and sort of melt as a substitute.If you're on Wheat Belly, Tamari is the proper substitute for soy sauce. And red chili paste is readily available in a lot of the Wal Mart produce sections so you can Thai to your heart's content. Mexican groceries had all kinds of hot red and even green chilies before Thai was popular here so that is another source of the necessary chilies for Thai foods -- your local, long standing Mexican market produce section.
In some larger cities, there may even be a Thai garden plot type farmer's market where they grow their own basil, other produce and vegetables you can buy to use in your Thai recipes. Look for these in a Thai or oriental section of town.
Health food stores also carry a lot of Thai ingredients because they are so healthy.
Sometimes Indian stores will also have a lot of the dry spices and the other ingredients used in Asian cooking so you might look there as well.
You will become quite fond of dark or toasted sesame oil once you start cooking with it. It will transform the taste and smells of your food in addition to the health of your stir fried food. That and coconut oil and butter are all I use these days.
I personally use only apple cider vinegar in place of any rice vinegar, etc., because apple cider vinegar is better for health than any other vinegar. It keeps your liver functioning better. But you can always add a little sugar substitute or sweetener to take the edge off if it is too sour for you or your family. Just don't add too much and defeat the healthy aspect of it.

I have a 10 and a 13 year-old who loves Pad Thai, Fresh Rolls (Basil Rolls), and Miso Soup. Every time we go out it is at least $50. I had no idea how simple it was to make these dishes... Now I can make them at home!
This is one book that is well worth every penny!
